Asparagus leaves and herbs for the garden
Today we have thunder and lightning one minute and the other the sun is out here in Vaxholm. This is what we call typical April wheather hm...but it's May. So when the wheather is like this I think we shall have a nice bowl of soup for dinner together with a fresh baked bread and a nice cheese. I have some nice nettles behind a shed I think I will take some of those as well that will be perfect.
1 small onion or leek
4 handfuls of mixed greens and herbs
Asparagus
6 dl nice stock of your choice
1 generous knob of butter and 1 tablespoon of flour
1 dl white wine

Soup with Asparagus and Garden greens.
1 small onion or leek
4 handfuls of mixed greens and herbs
Asparagus
6 dl nice stock of your choice
1 generous knob of butter and 1 tablespoon of flour

salt and pepper
Cut the asparagus into small pieces (save the tips for decoration) and chop the onion and greens. Melt butter and add onion sizzle for a minute, then add the vegetables and last the flour. Pour in the liquid and boil for a few minutes. Now you can either put it in the blender or leave it as it is. If you blend the soup add the tips after mixing and boil an additional 3 minutes.
Serve with a nice rustique country bread or croutons.

Mouse the soup was delicious...I put dab of sauce Bearnaise on the top and that was fab.
